Emmer is one of the most drought tolerant grains. The current crop is growing in Cascabel. Grain can be soaked and eaten raw or warmed for breakfast or cooked and used like rice. No refrigeration is needed for emmer products which contain no gluten. Baked goods include bread, scones, biscoti, graham crackers and many kinds of cookies made from organic emmer grain.
